EAT outdoors: Gnocchi

Fried Gnocchi

Ingredients:

Oil
Gnocchi (400g packet)
Onion, chopped
Red pepper, sliced
Sauce – 400g tin of chopped tomatoes and 2 large spoonfuls of mascarpone (alternatively use a jar of bought sauce)

What to do:

1. Heat the oil in a pan.
2. Fry the gnocchi until browned.
3. Add the onion and brown.
4. Add the pepper and soften.
5. Add sauce (tomatoes and mascarpone) and warm.
6. Serve and eat!

There are plenty of country parks around the country, welcoming urban folk into the countryside for fresh air and beautiful views. A country park is therefore the ideal place for a one-pot! You can walk or cycle in the park and re-energise yourselves with a quick meal.
